At Vermilion
My aunt, Tom and I have a ritual of dining once a month at a nice restaurant. This month was At Vermilion which is a latin/indian restaurant. The chef is Next Iron Chef contestant Maneet Chauhan combines the best spices from both the latin and indian world. We started out with shredded duck on mini arepas, blackened shrimp and artichoke pakoras. I had everything but the duck and I have to say it was all AMAZING! As for dinner, I had the banana wrapped sea bass with a coconut broth, lentils and a rice cake. The flavors were fresh and vibrant. I thought latin and indian cuisine would be much too powerful considering the amount of spices already used in the dishes; however, they were surprisingly quite sexy. I would highly recommend that you check out this place.
Kate Nash 11/19/10
Cute and bubbly Kate Nash performed at Terminal 5 on Friday, November 19th. My friend Nora and I attended the concert and we were absolutely delighted with her performance. The opening bands were SuperCute and Peggy Sue. SuperCute were, well, cute. The bands consists of 2 lovely young ladies who performed a couple of songs on their ukuleles. It is funny because on Thanksgiving I was watching the parade and an HP commercial came on with a song by Supercute! Bravo to them.
The second band, Peggy Sue, a UK folk/indie rock band played rather well. They played some catchy tunes with an upbeat attitude. Pretty bad ass.
But the woman of the hour was Kate Nash. She was lively, down to earth and her sound was joyous. She belted out new tunes and old tunes, such as Foundations. I knew all the old tunes but I should have brushed up on the new ones. However, the other folks around us knew all the songs word for word. It was rather strange being amongst a bunch of college kids. I began listening to Kate Nash right after college and seeing all these young college kids made me realize how much older I was becoming and how young I felt at the same time. Listening to Kate Nash live was a nice trip down memory lane.
Showers of Love
Guess what was 11/7? yup my shower! It was absolutely fantastic. It was great to see all my family and friends together in one room. The event took place at the George Washington Manor in Long Island. I was under the impression that Tom and I would be attending a work event. However, once I walked into the parking lot, I noticed a few cars that were VERY familiar. Once I stepped into the room, I shouted surprise as everyone else procliamed surprised. I'm wicked in that sense.

I had the privilege to meet Rebecca Minkoff at Bloomingdales on 11/6/10. She is as sweet as could be. She introduced me to her new line which was displayed on the 4th floor. She had some fantastic pieces such as a retro mini strap bag (see above). I had my eye on a strappy black bag. Also, with every purchase, an artist was on site to monogram the bags. Sweet deal!

I'll take my chair to go, please
I need my own spot in my apartment so I can furnish it with eclectic things. Tom is into modern and I'm into antique with a twist of contemporary. I like to see things from the past meet with new things. I want my apartment to tell a story about who I am and what I like. So far our apartment is a mix of things-our living room is very Tom and our bedroom is very me. Although, at the end of the day Tom has a larger say as to what I bring into the apartment. Little does he know, when we move into a larger space, we will have to compromise. I'm letting him have his fun since this is his first apartment. Next time, it will be our say.

It's been a year!
WOW -it just dawned on me that it has been a year since I started this blog. I may be writing to myself but I'm finding this blogging thing very therapeutic. Since I began my blog, I have planned my wedding, started a new position, in the process of starting my baking co., gained some new friends and found a new appreciation of the online world. I'm joyous for this experience and I hope for many more inspiring blogs.

Food Fest Weekend
Last Thursday, Tom and I volunteered to help the Food Bank during the Wine and Food Festival. We attended the Chelsea After Dark in the Chelsea market. We volunteered last year and were really excited to attend again. Not only is the Wine and Food Festival a lot of fun, it's also a great cause. All proceeds go to community based initiatives. We assisted by collecting tickets and handing out wristbands. Everything seemed to run smoothly since most people were looking to have a good time.
As for the rest of the weekend... we went apple picking! The apples were just delicious. There is nothing better than picking an apple from the tree, wiping it against your shirt and eating it. The juices dripping down your face and all over your hands. I felt like a kid. I was in heaven. The best part, the place had a petting zoo! With pigs! I love pigs. I think I may have shoved a kid to get a photo of the pigs. haha. After picking out the best apples, I decided to go home and make a pie. Yes, after all the apples that I ate, the apple cider donuts, I still proceeded to make a pie. However, it is currently sitting in the freezer for any future company. I'm sticking with my wedding diet and full exercise routine. ::pat self on back:: For now on, all baked goods will be for this blog and friends. Enjoy!

Drinks, Dinner and a Play
What a weekend! We had great fall weather here in NYC. I spent most of the time in the kitchen cooking up a fantastic meal for a friend.
Started off the weekend with a drink with some zumba friends. We went over to Rapture which is one of my favorite spots to chill on a couch, have a martini and chat it up with friends. The boy was out of town Friday night so it was nice to be out with some friends to keep me company.
Saturday, I spent the day making a fantastic meal for a friend of mine.

Artichokes with lemon butter sauce
Roasted Garlic Chicken with root vegetables
Chocolate buttermilk cupcakes with coffee and cinnamon butter cream
I started by marinating a few pieces of chicken with garlic, lemon, rosemary and more. (recipe to follow)
I then prepared the cake for my chocolate buttermilk cupcakes(recipe to follow). The original recipe was designed for an actual cake but I decided to try and perfect my cupcake recipe. I had a C level experience when I tried to create gluten free cupcakes. They turned out okay but not at all what I expected. Once my friend arrived, I was in the middle of boiling the artichokes and creating the lemon butter dip. After our fulfilling meal, we both curled up on the couch, enjoyed some cupcakes and watched "Let the Right One In," which has been recreated and entitled "Let me In." What a fun girls night in!
Sunday, another fun girls day-this time with grandma and aunt. We attended a Spanish performance on East 4th street. The play was called Sabina y Lucrecia. Sabina y Lucrecia is about two women who escape an insane asylum and hide away in Lucrecia's old house. The characters seems to be normal at times but they seems to provoke the craziness in each other. I tried to figure out if these women could possible live in "normal" society, but it seems the only place safe for them would be in a hospital. They are not able to tackle the simple things in life such as walking. There is a scene where Sabina wakes up and is distressed because she cannot recall how to walk, when we previously saw her doing so. Sabina ties random pieces of string to her feet in hopes that this will cushion her feet while she hops around. As the play progressed and their craziness increased, the tension started to build. They became hostile and abusive towards each other. We hope they will become long time friends, but in the end, we are fully aware that they are psychiatric patients. After such a tragic story, grams, aunt and I decided to head to dinner at Yerba Buena. The finance met up with us and we all enjoyed a nice family meal.

ROASTED GARLIC CHICKEN WITH ROOT VEGETABLES
Chef Andrew Carmellini cooks his fire-roasted garlic chicken for two (above) in a wood-burning oven at Locanda Verde ($21 per person; Greenwich Hotel, 379 Greenwich St.; 212-925-3797). The recipe below, adapted from Carmellini’s “Urban Italian” cookbook (Bloomsbury), can be made using a run-of-the-mill oven. Serves four.
For the marinade:
2 tbsp. chopped garlic
½ cup rice vinegar or white wine vinegar
½ cup extra-virgin olive oil
¼ cup grapeseed oil or corn oil
2 tbsp. dried oregano, preferably on the branch
2 tbsp. chopped rosemary
1 lemon, thinly sliced
1 tsp. red pepper flakes
2 tbsp. salt
1 tsp. course-ground black pepper
1 tbsp. sugar
For the chicken:
2 whole chickens, halved
½ tsp. each of salt and coarse-ground black pepper
For the vegetables:
¼ cup extra-virgin olive oil
salt and pepper to taste
¼ lb. each of four types of seasonal vegetables such as cauliflower florets, fingerling potatoes, celery root and seeded delicata squash, all cut into small pieces of roughly equal size (about 1 inch)
1. Combine all the marinade ingredients in a bowl and mix well.
2. Place chicken halves in large container and pour marinade over the top. Cover with plastic wrap and marinate in fridge for at least eight hours, or overnight.
3. Preheat broiler.
4. Remove chicken from marinade (but don’t wipe the herbs off). Season with salt and pepper.
5. Place chickens on a roasting rack and broil them until the skins are crisp, about five minutes.
6. While the chicken is broiling, combine all the vegetables in a large roasting pan and toss with oil. Spread in a single layer and season to taste with salt and pepper.
7. Reduce the heat to 425 degrees and put the vegetables on a separate oven rack.
8. Bake the chicken until the juice runs clear when you stick a leg with a knife, about 20 minutes. Remove from oven.
9. Increase the heat to 475 degrees. While the chicken rests, continue to cook the vegetables until fork-tender.

Adapted from Smitten Kitchen
1/2 cup (1 stick or 4 ounces) unsalted butter, softened
1 cup (6 7/8 ounces) firmly packed light brown sugar
1/2 cup (4 ounces) granulated sugar
1 large egg, at room temperature
1 cup buttermilk
1 teaspoon vanilla extract
1 1/2 cups (6 3/4 ounces) all-purpose flour
3/4 cup (2 5/8 ounces) non-Dutch cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Preheat the oven to 325°F. Butter and lightly flour a cupcake pan. In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugars and beat until fluffy, about 3 minutes. Add the egg and beat well, then the buttermilk and vanilla. Don’t worry if the batter looks a little uneven. Sift the flour, cocoa, baking soda, baking powder and salt together right into your wet ingredients. Stir together with a spoon until well-blended but do not overmix. Scrape down the batter in the bowl, making sure the ingredients are well blended.
Pour the batter into the prepared loaf pan. Bake for 10-12 minutes, or until a cake tester inserted into the center of the cupcake comes out clean. Cool on rack for about an hour, at which point you make the butter cream.
Coffee and Cinnamon Butter Cream
4 cups of confectioners sugar
1 stick of butter (room temperature)
1 egg (room temperature)
1 tablespoon of heavy cream
1 teaspoon of ground coffee
1 teaspoon of coffee
1 teaspoon of cinnamon
Cream butter until fluffy. Add confectioner's sugar and continue creaming until well blended. Then add the egg and blend well.
Add the rest of the ingredients and blend on low speed until moistened. Beat at high speed until frosting is fluffy.

Why I should move to Europe?
For as long as I could remember I have always wanted to move into some lovely villa in Spain, France or Greece. Something about the culture, the people and the food draws me in. I had all these expectations of what life would be like before I actually ventured to Europe. During my senior year of college, I was fortunate enough to begin my adventure and seek all that I was expecting in Spain. I studied in (with lisp) Barcelona for 4 glorious months. Not only did I discover what it was like to live in a different city, I also was granted an opportunity to live amongst the people. I immersed myself with all that Spain had to offer; trips to Valencia, Seville, museums, mountains and more. All my expectations were right on and more. Although I missed my family and friends, I felt an ease of comfort. I felt like I was home. I'm sure it was helpful that I spoke Spanish, but something about the environment made me feel like I had been there for years. Since then, I have visited France and received the same sense. Europe has all these cultural elements that tingle my every being. Perhaps it feels like home because my home is drenched with cultural diffusion (thank you Ms. Lorenzoni); the advantages of living in New York City. Although I love this city and everything it has to offer, I feel that someday I'll return to Europe living in a quiet town right outside the city with a vineyard out back, a luxurious pool, and a lushes garden. Eating a fresh and delicious meal with my family under an olive tree. ::Sigh::
Another reason to move to Europe, well France, their view on meals. We Americans tend to take advantage of our meals. We eat too quickly and do not enjoy all the time it took to prepare the meal. We'd rather eat for convenient sake as opposed to quality. In France, they teach the young to eat good quality food at a young age. How young? Try 3 years of age. So while American children are having fish sticks and pizza, French children are having beet salad and snails. France's Gourmet School Lunches

A Visual Baking Experience
I love baking photos, ingredient photos and every other type of food photo! I've decided that when I open my bakery/cafe I will have tons of photos of prepared food and ingredients. I love how food is a form of art and how you can make art out of food. Ikea has created a collection of recipes entitled Hembakat är Bäst [Homemade is Best] with photographer Carl Kleiner. The images feature various ingredients such as butter, sugar, salt, flour and more. When I first saw these photos, I quickly began to guess what the ingredients were for. Perhaps a brownie? or maybe a pie? Either way, the photos make me want to go home and bake.

How was your weekend? My weekend was filled with wedding fun, birthday fun and plain ol' good fun!
Today is Mommina's Birthday - AKA - Grandma. She is fabulous, spunky and 67 today! LOVE her to pieces!
This past weekend, I started it off with ordering the future hubby's wedding gift. I got him...Nope, not telling. He's been hounding me for days asking numerous questions about where I got it, how much is it, what does it look like...Will not be revealed till 2/27/11.
Saturday, spent the afternoon back at Fordham. It was so weird to be on campus again. It was great seeing old friends, current friends and the RAM. We enjoyed some beer, Tino's sandwiches and an italian ice.
That night we ventured to Hiro where we celebrated Andy's birthday with friends.
Sunday, as you could imagine was spent in bed followed by Meatloaf night and some snuggle time with the fiance.

Obsessed!!!
After viewing Keeping up with the Kardashians, I am obsessed with finding out what sunglasses they were wearing. I need some insight on their stylish eyewear! The next day, I'll search on the web to figure out what were they wearing, I rarely get a direct answer but I come close. Sunday, Kim was wearing these awesome reflective shades. I love wearing shades that hide my eyes so that I can people watch on the subway. These were the closet I could find to what Kim was wearing. Now it's only a matter of finding them to purchase.

Brownie and Movie weekend
My goal for this past weekend was to sleep late, bake, enjoy some movies and hang out with family. Mission accomplished! I started my Friday evening enjoying some delicious Sea Salt Caramel Brownies (recipe below) with a side of Dear John. Seems like such a girlie thing to do, but I was glad to enjoy the time alone. The movie was rather sad and yet the whole time I kept thinking how my fiance thinks I look like Amanda Seyfried. I don't see it.
Saturday, fun times in the city with the auntie. We spent the whole day walking and shopping downtown from the east side to the west side. I purchased a Josh Brody dress, a winter hat and a faux fur coat by Laundry. I can't wait for the cold weather!
Sunday, fun day! I spent the day visiting a close friend of mine. Normally the drive to his place takes about 10 minutes. Well, on Sunday, it took me about 40 minutes. I was stuck behind a wood chipper truck. Since the tornado passed through Queens on Thursday, Forest Hills has been on lock down. The streets are covered with tree trunks and branches. It really does look like a war zone. After sitting in traffic all that time, I was even more starving than when I started. Upon my arrival, I quickly chased my friend out of his apt and we strolled over to his local Indian restaurant. We ate great Indian food, followed by gelato. Only in New York can you enjoy authentic Indian food and then follow it up with an Italian treat! Love it!

Sea Salt Caramel
• 1/2 cup heavy cream
• 1 teaspoon sea salt
• 1 cup sugar
• 2 tablespoons light corn syrup
• 1 teaspoon Vanilla
• 1/4 cup sour cream
In a medium saucepan, combine the cream and the salt. Simmer over very low heat until the salt is dissolved. Stir in the sugar and corn syrup carefully. Cook over medium heat until it is a medium goldish brown – it will continue to cook in the heat of the pan. Remove from the heat and let cool for one minute. Whisk in the sour cream. Let the caramel cool to room temp, then follow the brownie instructions. Left over caramel may be refrigerated.

Ingredients
• 4 ounces unsweetened chocolate
• 1/2 cup butter
• 1 cup of sugar
• ½ cup of light brown sugar
• 2 teaspoons vanilla
• 3 eggs
• 1 cup all purpose flour minus 2 tablespoons
• 2 tablespoons of cocoa powder
• pinch salt
• 1/4 cup Chocolate Syrup
• half of the above caramel recipe
• (optional) pecans
Preheat oven to 325F.
Melt Chocolate and butter in small saucepan over low heat until smooth. Remove from heat and allow to cool for 5 minutes.
In a bowl, mix together sugar, eggs, and vanilla, and mix until well combined
Add flour, cocoa powder, salt, chocolate syrup and chocolate mixture and blend well.
In a greased 8×8 pan, pour a little over half of the brownie batter and bake for 18 minutes. Remove from oven and pour in the caramel. On top of the caramel, add the rest of your brownie batter. Add pecans to the top if you desire. Return to oven and bake for another 18-22 minutes. Brownies will still appear a little shaky, due to the caramel, but they will firm up once cooled. Do not overbake.
Can be enjoyed with fresh whipped cream or ice cream.
Saturday, fun times in the city with the auntie. We spent the whole day walking and shopping downtown from the east side to the west side. I purchased a Josh Brody dress, a winter hat and a faux fur coat by Laundry. I can't wait for the cold weather!
Sunday, fun day! I spent the day visiting a close friend of mine. Normally the drive to his place takes about 10 minutes. Well, on Sunday, it took me about 40 minutes. I was stuck behind a wood chipper truck. Since the tornado passed through Queens on Thursday, Forest Hills has been on lock down. The streets are covered with tree trunks and branches. It really does look like a war zone. After sitting in traffic all that time, I was even more starving than when I started. Upon my arrival, I quickly chased my friend out of his apt and we strolled over to his local Indian restaurant. We ate great Indian food, followed by gelato. Only in New York can you enjoy authentic Indian food and then follow it up with an Italian treat! Love it!

Sea Salt Caramel
• 1/2 cup heavy cream
• 1 teaspoon sea salt
• 1 cup sugar
• 2 tablespoons light corn syrup
• 1 teaspoon Vanilla
• 1/4 cup sour cream
In a medium saucepan, combine the cream and the salt. Simmer over very low heat until the salt is dissolved. Stir in the sugar and corn syrup carefully. Cook over medium heat until it is a medium goldish brown – it will continue to cook in the heat of the pan. Remove from the heat and let cool for one minute. Whisk in the sour cream. Let the caramel cool to room temp, then follow the brownie instructions. Left over caramel may be refrigerated.
