Just The Beginning

I feel like there is something big awaiting me. I don't know what it is and why I'm feeling this way, but I feel like something positive on the horizon. I've finished reading (for the second time) The Game of Life and How to Play It by Florence Shinn. If you know me at all, you know that these books are right up my alley. I love to be reminded of all the positive things out there. Living in New York, you sometimes get wrapped up in negative, pessimistic thoughts feeling like a passenger on a stuffy subway, cramped with people breathing hot air down your neck. This book has really reminded me about all the good things there are out there. Such as, I'm getting certified to teach yoga this weekend. Creating baked goods for friends and family for their special occasions. I'm super excited for all my friends who are pregnant. Spending time with my husband and pup Lola. Being creative and motive to bake, write my book, work and plan events.
Even with that being said, I feel something in my gut that there is something brewing. Will it be money? A new home? A business adventure? Travel? I'm not sure yet. But I'm hopeful to find out.

Cheers for Cupcakes

This has been a coupon weekend! I used up on slimming massage yesterday and today I used my cupcake voucher. There is a new place in my area called Cupcake in Heels. I like to try all the new bakeries in my area to see the competition and to have an idea of where to get a good cupcake without venturing out to the city. I have to say the cupcakes were actually delicious. I'm very particular about my cupcakes. The cake must be moist and soft; the frosting should be creamy but firm and filled with good flavor. Check, Check and Check!

I received 3 cupcakes with my voucher and a cup of coffee. The cupcakes I chose were coconut (coconut cake with coconut frosting), chocolate and peanut butter (chocolate cake and peanut butter frosting) and red velvet. They were all very flavorful and fresh.


The shop itself was small, cozy and familiar. It was designed exactly how I would decorate it-purple, Parisian and filled with fun items such as cupcake stands, ornaments and jars filled with treats. I'm inspired to open a shop like this someday. Until then, I wouldn't mind going back and grabbing some more delicious cupcakes and supporting a fellow baker.

The Things We Do For Beauty

About a week ago I saw a LivingSocial deal for a slimming treatment. I'm always game to try something that's going to make me look and feel slimmer. Who isn't? It was a great price, $49 to help me prep for beach season-IT'S A STEAL! Done!
I've actually done a similar treatment in the past. Before my wedding, I was treated to a full body cleanse wrap that is designed to release all your toxins while tightening your skin. It's a really nice massage and afterwards, they wrap you in plastic, a heated foil blanket and lots and lots of towel. It's meant to sweat out all the impurities. Although, I felt like a burrito, I loved it! And so I thought why not try this slimming treatment.

Today, I went to Yin Beauty to use my voucher. Upon entry, I was given a form to fill out. "What areas do you want to concentrate on? Options: waist, thighs, abdomen, arms, hips"- I checked all expect arms. As the therapist looked at my sheet, she seemed puzzled. "You have to select one area," she exclaimed. Oh. I decided on my thighs; inner and back. Seems to be the most difficult area for me to keep it all tight and together no matter how much I exercise.
She goes on to explain how this might be painful. Painful? She said the treatment is forceful, I should expect swelling, redness and soreness. Also, the oil she is going to use has cayenne pepper in it. I should expect heat and I shouldn't shower for 4-5 hours after the treatment because it may cause stinging from the heat. Finally, after she completes the massage portion, my legs will be wrapped in cellophane and should not be removed for one hour. Which means, I'll have to go home with plastic around my thighs, under my tight jeans. Here we go...
After stripping down to my undies and tank top, I laid on the bed thinking about what the therapist just said; What did I get myself into???? Swelling? plastic, pepper?? I wanted to look slimmer not be marinated like a chicken!
And that is exactly how I felt.
She rubbed the oil on my legs and kneaded my skin, taking about 25 minutes per leg. I thought to myself, I know exactly how the tsoureki bread I made for Easter felt. As she pounded out the first leg, she explains how I don't have any fat and she's not sure why I am doing this treatment. Well, that's fantastic news! but too late now! She mentioned how it's normally painful for people who have fat. Lucky me because the treatment felt great! She moved from my none fat left leg to my right leg, where she happened to find a pocket of fat cell. OH NO! Where did that come from? But have no fear, she smoothed that out instantly and it was gone.
Every so often she peeked out to ask someone about a machine. Hmm what type of machine?
Moments later, the machine was in the room and I was still faced down on the table unsure what to expect. I heard a vibration sound and she mutters, "if it's too much let me know."
I felt a small object against my skin moving side by side. Doesn't seem anything too crazy until she lifts her hands and I realize its a vacuum. My skin was being lifted and kneaded at the same time. So after being kneaded like bread and marinated like a chicken; I am now being sucked and pinched like a carpet. Okay now it just got weird. I wanted to let out a giggle but I felt confused with the pinching going on; should I be laughing or telling her to stop? Well, I made it this far... 
The final step was coming-the cellophane. She asked me to stand and began to wrap each leg with plastic. I caught a glimpse of my legs, smooth and stretched. I like!
I asked her, "So I'm going to put my jeans on and go home with this on?" She looked at me like "duh" and said "yes, no one will see the plastic." That's not my fear, my fear is sweating through my jeans. It's humid out, I have to walk to and from the train and I'm wearing a jacket. This is going to be interesting.
I made it home just fine, uncomfortable, but worth it, without a drop of sweat.

Now, point me to the beach!

Weekend Meals

I spent some time with my mother-in-law on Saturday. I cooked up a nice lunch for us, heavy, but they say the biggest meal should be in the afternoon, so I went for it. Coq au Vin with Mashed Potatoes and Puerto Rican Coconut Pudding (Tembleque). Pretty hardy meal but very tasty.

We spent most of the day chit chatting about everything. I'm very lucky to have an outgoing mother-in-law! Of course, we had to watch an episode of Mobwives. That show cracks me up! I can't get enough of those girls! Don't even get me started on Big Ang...I want her over my house at the next family get together. She has such a loving personality, she's spunky (in a tough girl sort of way) and seems like she is filled with good advice based on her experiences and life adventures.

Coq au Vin

Ingredients

  • 2 tablespoons vegetable oil
  • 6 slices turkey bacon, small slices
  • 4 chicken thighs (2 1/2 to 3-pounds), trimmed of excess skin and fat
  • 1/2 cup all-purpose flour
  • Kosher salt and freshly ground pepper
  • 1/2 teaspoon Adobo
  • 1 large onion, thinly slice
  • 4 to 6 medium white mushrooms, halved (about 4 ounces)
  • 1 cup dry red wine
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons finely chopped fresh Rosemary

Directions

1. Heat the oil in a large covered casserole dish over medium-high heat. Add the bacon and cook, stirring, until lightly browned and fat renders, about 5 minutes. Transfer bacon to a small bowl.
2. Season the flour with 1/2 teaspoon salt and some pepper and adobo in a large bowl. Add the chicken and turn to coat completely.
3. Shake excess flour from chicken and brown in the casserole, about 4 minutes per side. Remove to a plate and pour off all but 2 tablespoons fat from the casserole. Add the onion and mushrooms and cook, stirring, until the onions are soft, about 3 minutes. Pour in the wine, increase the heat to high and boil, stirring to pick up any browned bits on the bottom, until reduced by half. Return the chicken to the casserole, add the thyme and rosemary and reduce heat to medium. Sprinkle half of the bacon into the pot, cover and cook until the chicken is tender, about 30 minutes.
4. Remove the chicken and sauce to a serving plate or platter.  Serve with mashed, if desired.

Tembleque

  • 7 ounces cream of coconut
  • 1/2 cup of milk 
  • 1/4 cup cornstarch
  • 1 tablespoons sugar (or to taste)
  • 1 teaspoon vanilla 
  • 1 teaspoon Cinnamon 

Directions

  1. In a medium saucepan combine milk and cream of coconut,corn starch,vanilla, cinnamon and sugar mix very well.
  2. Stir constantly on medium high until mixture begins to boil and gets thick.
  3. Let boil a couple more minutes still keep stirring, then you can either pour into individual dessert cups or a mold.
  4. Let cool on tabletop, then refrigerate for a couple of hours.

Reflections

The New Year is here and it has me reflecting on my accomplishments and my life goals. I'm pondering all the steps I've taken that have brought me to this point. I find myself running on the hamster wheel from time to time and forgetting to pause and just appreciate the things I've done. I'm taken huge career steps but for me, they seem so little. I went from wanting to be an attorney to media over the course of 5 years. How did that happen? Well, I've always found myself to be more creative, hands on and open to new adventures. I jumped ship and followed my heart. Now, I'm in a creative position and making my own creations through my love for baking. I'm trying to do it all because I can. I've seen much older adult regret their actions because they didn't take action. Sure, some dreams are larger and more riskier, but if you don't take a small step, you never know what will come. For example, I would love to own my own café someday. It would be a huge risk but for now, I'm taking small steps to get there. Starting with my catered confections. It gives me great pleasure to be able to create custom treats for friends and family. It may not be my actual café but it's a stepping stone.
Think of your dreams and what you wish to accomplish in your lifetime. I have a dozen or more and I know I'll touch on each of them some how, because I want to look back and say "yeh I tried that."
So clechée but life is too short and we have to make the most of it.
