I've been a terrible blogger! I've been doing some fun and interesting things with baking and traveling but I haven't taken photos or haven't had the time to post. I apologize.
For Easter weekend, I made a hummingbird cake which came out amazing after my mishap. I baked two layers for a 2 layer cake. The first layer cooked fine, the second layer-FAIL! (my fault) I thought my toothpick came out clean but I guess I was wrong. I thought the uncooked middle could easily be scooped out-wrong! I ended up with a hole in one of the layers. I panicked and couldn't think of what to do. Do I cover it with frosting and pretend nothing happened? Do I just leave it one layer and toss the second layer? But then I had a brilliant idea-cake pops! I took the warm, holey layer and put it in my mixer with the cream cheese frosting. I formed balls and popped them in the fridge. I melted some chocolate, dipped and decorated eat ball. I made very moist and delicious Hummingbird cake balls and they were totally a mistake! shhhhh our secret. So I guess your answer to a cake Flop is to make cake pops ? Hahahaa. Thank you for the inspiration and keep up the baking ! this looks yummy :)
